Stuffed Celery
Wash the celery, cut it into stalks, trim off the ends, and cut it into 2 to 4 inch lengths. String the celery (see below) to remove the tough strings. Dry the inside of the celery segments with paper towels and stuff them with peanut butter or cream cheese. If you are stuffing the celery with cream cheese sprinkle a bit of paprika on the tops. You can also stuff celery with different types of cheese spread (cheddar spread etc) as long as the texture of the cheese is soft enough to spread, but not so soft that the cheese won't stay firmly inside the celery.
