Cold Stuffed Dates
Cut a pocket in a date and stuff it with peanut butter or cream cheese and (if desired) top it with an almond, pecan half, or other nut.

Hot Stuffed Dates
Preheat the oven to 450 degrees F. Cut a pocket in a date, stuff it with a piece of cheese or other filling, wrap it in a piece of bacon, secure with a toothpick, arrange dates one inch apart on a baking sheet. bake at 450 degrees 5 minutes on one side, then turn and bake 5 or 6 minutes on the other side or until the bacon is crisp. Drain off the bacon fat and serve immediately.
