Lime Jello Cottage Cheese (Recipe)

This salad made with lime jello, cottage cheese, nuts, and (surprise!) horseradish first became popular in the 1950's. Our Grandmother Walling use to prepare it often at family gatherings in Oklahoma. Some Walling family members make a slightly different version that uses cream cheese instead of cottage cheese and does not include horseradish. I will try to find that recipe and publish it here.

Lime Jello Cottage Cheese Ingredients
- 3 packages (3 ounces each) lime jello
- 2 cups boiling water
- 2 cups cold water
- 1 cup crushed pineapple
- 1 cup cottage cheese
- 1/2 cup mayonaise
- 2 tablespoons horseradish
- 1/2 cup walnuts

Lime Jello Cottage Cheese Ingredients
Dissolve jello in the two cups of boiling water. Mix in the two cups of cold water. After the cold water has been mixed in, mix in all of the other ingredients. Pour into a 9 x 12-inch loaf pan or a square or rectangular pan. Chill until set.
NOTE: Some cooks like to chill the mixture after adding cold water until is very slightly set, before adding the remianing ingredients, in order to prvent the pineapple and nuts from floating to the top before the mixture is set. If you do that, you'll need to watch the chilling gelatin carefully so it does not set too much before you add the other ingredients.
