Baked Scottish Eggs

Recipe for Scottish eggs that are baked rather then fried.

Scottish Egg Ingredients
- 1 pound of bulk sausauge
- 4 hard boiled eggs
- Flour for dredging
- 3/4 cups bread crumbs
- 1 beaten egg

Scottish Eggs Instructions
Preheat oven to 400 degrees. Shape sausage into four equal size patties. Roll each hard boiled egg in flour to coat and place each one on a sausage patty. Shape each sausage patty carefuly around each egg so none of the egg shows. Roll each sausage covered egg in crumbs until well coated. Bake 35 minutes or until the sausage is thoroughly cooked and no longer pink next to the egg (pierced one with the tip of a knife to check).
